dairine could not possibly know he said that becaus she was already running off on her ordeal this was just before nita and kit went after her.

i'm confused...
if someone could shed some light on this it would be appreciated

An easy answer, I suppose, would be to say that Nita told Dairine that comment later because she found it so memorable. Note that in HW, Harry doesn't ask why Tom wasn't off the planet more, Carl is explaining why he and Tom can't go after Dairine. If Dairine heard that from Nita, rather than directly, it would be easy to misremember the context.
